A classic high-protein lunch that is filling without being heavy, useful for appetite control.

Ingredients

  • 1 large baking potato, about 300g
  • 1 tin of tuna in spring water, drained
  • 60g sweetcorn
  • 40g light mayonnaise
  • 20g spring onions, sliced
  • side salad leaves

Method

  1. 1Bake the potato at 200C for 55 to 60 minutes until crisp outside and fluffy inside.
  2. 2Mix the tuna with sweetcorn, light mayonnaise and spring onions.
  3. 3Split the potato, spoon in the tuna filling and serve with salad leaves.
