A classic high-protein lunch that is filling without being heavy, useful for appetite control.
Ingredients
- 1 large baking potato, about 300g
- 1 tin of tuna in spring water, drained
- 60g sweetcorn
- 40g light mayonnaise
- 20g spring onions, sliced
- side salad leaves
Method
- 1Bake the potato at 200C for 55 to 60 minutes until crisp outside and fluffy inside.
- 2Mix the tuna with sweetcorn, light mayonnaise and spring onions.
- 3Split the potato, spoon in the tuna filling and serve with salad leaves.
