Ingredients
- 250g firm tofu, cubed
- 1 tbsp Thai red curry paste
- 200ml light coconut milk
- 20g peanut butter
- 100g broccoli florets
- 150g microwave jasmine rice
Method
- 1Fry the tofu until golden on the edges.
- 2Add the curry paste, coconut milk and peanut butter and stir until smooth.
- 3Add the broccoli, simmer until tender and serve with the heated rice.
