Ingredients

  • 250g firm tofu, cubed
  • 1 tbsp Thai red curry paste
  • 200ml light coconut milk
  • 20g peanut butter
  • 100g broccoli florets
  • 150g microwave jasmine rice

Method

  1. 1Fry the tofu until golden on the edges.
  2. 2Add the curry paste, coconut milk and peanut butter and stir until smooth.
  3. 3Add the broccoli, simmer until tender and serve with the heated rice.
