Ingredients
- 150g firm tofu
- 1 wholemeal muffin
- 50g cherry tomatoes
- 30g spinach
- 1 tsp olive oil
- 1/2 tsp turmeric
Method
- 1Crumble the tofu and cook in the olive oil with turmeric for 4 minutes.
- 2Add the spinach and tomatoes and cook until the spinach wilts.
- 3Toast the muffin and fill with the tofu scramble.
