Ingredients

  • 150g firm tofu
  • 1 wholemeal muffin
  • 50g cherry tomatoes
  • 30g spinach
  • 1 tsp olive oil
  • 1/2 tsp turmeric

Method

  1. 1Crumble the tofu and cook in the olive oil with turmeric for 4 minutes.
  2. 2Add the spinach and tomatoes and cook until the spinach wilts.
  3. 3Toast the muffin and fill with the tofu scramble.
