This plant-based lunch is great for fibre intake while still giving a decent protein hit.

Ingredients

  • 200g firm tofu
  • 100g red cabbage, shredded
  • 1 carrot, grated
  • 1 red pepper, sliced
  • 50g edamame beans
  • 15g peanut butter

Method

  1. 1Bake or fry the tofu until golden and firm.
  2. 2Add the cabbage, carrot, pepper and edamame to a bowl or lunch box.
  3. 3Thin the peanut butter with a splash of water, then drizzle over and top with the tofu.
