This plant-based lunch is great for fibre intake while still giving a decent protein hit.
Ingredients
- 200g firm tofu
- 100g red cabbage, shredded
- 1 carrot, grated
- 1 red pepper, sliced
- 50g edamame beans
- 15g peanut butter
Method
- 1Bake or fry the tofu until golden and firm.
- 2Add the cabbage, carrot, pepper and edamame to a bowl or lunch box.
- 3Thin the peanut butter with a splash of water, then drizzle over and top with the tofu.
