Ingredients
- 200g firm tofu, cubed
- 150g microwave jasmine rice
- 1 tbsp Thai red curry paste
- 100ml light coconut milk
- 100g mangetout
- 1 tsp sesame oil
Method
- 1Fry the tofu in the sesame oil until golden.
- 2Add the curry paste, coconut milk and mangetout, then simmer for 5 minutes.
- 3Serve with the heated jasmine rice.
