Ingredients

  • 200g firm tofu, cubed
  • 150g microwave jasmine rice
  • 1 tbsp Thai red curry paste
  • 100ml light coconut milk
  • 100g mangetout
  • 1 tsp sesame oil

Method

  1. 1Fry the tofu in the sesame oil until golden.
  2. 2Add the curry paste, coconut milk and mangetout, then simmer for 5 minutes.
  3. 3Serve with the heated jasmine rice.
