Ingredients

  • 300g chicken breast, sliced
  • 2 tbsp Thai green curry paste
  • 200ml light coconut milk
  • 100g green beans
  • 100g mangetout
  • 150g microwave jasmine rice

Method

  1. 1Fry the chicken briefly in a pan, then stir in the green curry paste.
  2. 2Add the coconut milk, green beans and mangetout and simmer until the chicken is cooked through.
  3. 3Serve with the heated jasmine rice.
