This lunch gives you plenty of protein for muscle retention plus enough carbs to keep training performance and afternoon energy up.
Ingredients
- 180g lean rump steak, sliced
- 125g cooked basmati rice
- 1 red pepper, sliced
- 1 small onion, sliced
- 80g sweetcorn
- 1 tsp olive oil
- 1 tsp smoked paprika
- 1 tsp ground cumin
- ½ tsp chilli flakes
- 60g Greek yoghurt
- Fresh coriander
- 1 lime, cut into wedges
Method
- 1Season the steak with smoked paprika, cumin and chilli flakes.
- 2Heat the olive oil in a frying pan and cook the onion and red pepper for 5–6 minutes until softened.
- 3Add the steak and cook for 2–4 minutes until browned to your liking, then stir through the sweetcorn.
- 4Serve over the cooked rice and top with Greek yoghurt, coriander and a squeeze of lime.
