A filling lunch pot that works well for active clients who need more total energy.
Ingredients
- 4 reduced-fat pork sausages
- 150g couscous
- 1 red pepper, chopped
- 1 tin of chopped tomatoes
- 1 tsp smoked paprika
- 50g spinach
Method
- 1Cook the sausages and slice them into chunks.
- 2Simmer the sausages with the chopped tomatoes, pepper and smoked paprika for 10 minutes.
- 3Make up the couscous and stir through the spinach, then serve with the sausage mixture.
