A filling lunch pot that works well for active clients who need more total energy.

Ingredients

  • 4 reduced-fat pork sausages
  • 150g couscous
  • 1 red pepper, chopped
  • 1 tin of chopped tomatoes
  • 1 tsp smoked paprika
  • 50g spinach

Method

  1. 1Cook the sausages and slice them into chunks.
  2. 2Simmer the sausages with the chopped tomatoes, pepper and smoked paprika for 10 minutes.
  3. 3Make up the couscous and stir through the spinach, then serve with the sausage mixture.
