Ingredients
- 200g baby potatoes
- 120g smoked mackerel fillets
- 50g cucumber, sliced
- 30g rocket
- 20g light yoghurt dressing
- 1 tsp capers
Method
- 1Boil the baby potatoes until tender, then drain and cool slightly.
- 2Flake the smoked mackerel into large pieces.
- 3Toss the potatoes with cucumber, rocket, yoghurt dressing and capers, then top with the mackerel.
