Ingredients

  • 200g baby potatoes
  • 120g smoked mackerel fillets
  • 50g cucumber, sliced
  • 30g rocket
  • 20g light yoghurt dressing
  • 1 tsp capers

Method

  1. 1Boil the baby potatoes until tender, then drain and cool slightly.
  2. 2Flake the smoked mackerel into large pieces.
  3. 3Toss the potatoes with cucumber, rocket, yoghurt dressing and capers, then top with the mackerel.
