A flavour-packed breakfast that supports fullness and can stop mid-morning energy dips.

Ingredients

  • 2 eggs
  • 200g passata
  • 1/2 red pepper, diced
  • 30g feta
  • 2 slices wholemeal bread
  • 1 tsp olive oil

Method

  1. 1Soften the pepper in the olive oil, then add the passata and simmer for 5 minutes.
  2. 2Make 2 wells, crack in the eggs and cook until set to your liking.
  3. 3Toast the bread, crumble over the feta and serve alongside the shakshuka.
