A flavour-packed breakfast that supports fullness and can stop mid-morning energy dips.
Ingredients
- 2 eggs
- 200g passata
- 1/2 red pepper, diced
- 30g feta
- 2 slices wholemeal bread
- 1 tsp olive oil
Method
- 1Soften the pepper in the olive oil, then add the passata and simmer for 5 minutes.
- 2Make 2 wells, crack in the eggs and cook until set to your liking.
- 3Toast the bread, crumble over the feta and serve alongside the shakshuka.
