Sausage Casserole with Beans

A practical family-style dinner that offers good protein and reheats well for leftovers.

Ingredients

  • 8 reduced-fat pork sausages
  • 1 tin of cannellini beans, drained
  • 1 tin of chopped tomatoes
  • 1 red onion, sliced
  • 1 red pepper, chopped
  • 1 tsp smoked paprika

Method

  1. 1Brown the sausages in a casserole pot, then remove and slice if you like.
  2. 2Add the onion and pepper, cook for 5 minutes, then stir in the chopped tomatoes, beans and paprika.
  3. 3Return the sausages to the pot and simmer or bake until thickened and the sausages are cooked through.
