A practical family-style dinner that offers good protein and reheats well for leftovers.
Ingredients
- 8 reduced-fat pork sausages
- 1 tin of cannellini beans, drained
- 1 tin of chopped tomatoes
- 1 red onion, sliced
- 1 red pepper, chopped
- 1 tsp smoked paprika
Method
- 1Brown the sausages in a casserole pot, then remove and slice if you like.
- 2Add the onion and pepper, cook for 5 minutes, then stir in the chopped tomatoes, beans and paprika.
- 3Return the sausages to the pot and simmer or bake until thickened and the sausages are cooked through.
