Ingredients

  • 2 salmon fillets, about 260g total
  • 300g baby potatoes, halved
  • 200g broccoli florets
  • 1 tbsp olive oil
  • 1 lemon
  • 1 tsp dried dill

Method

  1. 1Heat the oven to 200C and toss the potatoes and broccoli with olive oil and dill on a tray.
  2. 2Roast for 10 minutes, then add the salmon fillets and lemon slices.
  3. 3Roast for a further 12 minutes until the salmon is cooked through.
