- 2 eggs
- 150g black beans, drained
- 100g passata
- 1 small wholemeal tortilla
- 30g reduced-fat Cheddar
- 1 tsp olive oil
Method
- 1Warm the black beans with the passata in a small pan until thickened.
- 2Fry the eggs in the olive oil.
- 3Serve the eggs over the beans with the tortilla on the side and Cheddar sprinkled on top.
