Ingredients

  • 2 eggs
  • 150g black beans, drained
  • 100g passata
  • 1 small wholemeal tortilla
  • 30g reduced-fat Cheddar
  • 1 tsp olive oil

Method

  1. 1Warm the black beans with the passata in a small pan until thickened.
  2. 2Fry the eggs in the olive oil.
  3. 3Serve the eggs over the beans with the tortilla on the side and Cheddar sprinkled on top.
