A quick lunch with decent protein that works well on work-from-home days.
Ingredients
- 3 eggs
- 1 wholemeal wrap
- 40g feta
- 50g roasted peppers from a jar
- 20g spinach
- 1 tsp olive oil
Method
- 1Beat the eggs and cook them as a thin omelette in the oil.
- 2Lay the omelette into the wrap.
- 3Top with feta, roasted peppers and spinach, then wrap tightly.
