A quick lunch with decent protein that works well on work-from-home days.

Ingredients

  • 3 eggs
  • 1 wholemeal wrap
  • 40g feta
  • 50g roasted peppers from a jar
  • 20g spinach
  • 1 tsp olive oil

Method

  1. 1Beat the eggs and cook them as a thin omelette in the oil.
  2. 2Lay the omelette into the wrap.
  3. 3Top with feta, roasted peppers and spinach, then wrap tightly.
