A lighter dinner that still gives plenty of protein when calories need tighter control.
Ingredients
- 2 cod fillets, about 280g total
- 250g baby potatoes, halved
- 1 courgette, sliced
- 150g cherry tomatoes
- 1 tbsp olive oil
- 1 tsp dried oregano
Method
- 1Toss the potatoes, courgette and tomatoes with olive oil and oregano on a tray.
- 2Roast at 200C for 10 minutes, then add the cod fillets.
- 3Roast for a further 12 minutes until the fish flakes easily.
