A lighter dinner that still gives plenty of protein when calories need tighter control.

Ingredients

  • 2 cod fillets, about 280g total
  • 250g baby potatoes, halved
  • 1 courgette, sliced
  • 150g cherry tomatoes
  • 1 tbsp olive oil
  • 1 tsp dried oregano

Method

  1. 1Toss the potatoes, courgette and tomatoes with olive oil and oregano on a tray.
  2. 2Roast at 200C for 10 minutes, then add the cod fillets.
  3. 3Roast for a further 12 minutes until the fish flakes easily.
