A solid higher-calorie dinner for demanding training weeks when recovery needs are up.
Ingredients
- 500g lean lamb leg, diced
- 1 onion, diced
- 2 tbsp curry powder
- 1 tin of chopped tomatoes
- 100g 0% Greek yoghurt
- 150g microwave basmati rice
Method
- 1Brown the lamb with the onion in a large pan.
- 2Add the curry powder and chopped tomatoes, then simmer gently for 45 minutes until tender.
- 3Stir in the Greek yoghurt at the end and serve with the heated basmati rice.
