A solid higher-calorie dinner for demanding training weeks when recovery needs are up.

Ingredients

  • 500g lean lamb leg, diced
  • 1 onion, diced
  • 2 tbsp curry powder
  • 1 tin of chopped tomatoes
  • 100g 0% Greek yoghurt
  • 150g microwave basmati rice

Method

  1. 1Brown the lamb with the onion in a large pan.
  2. 2Add the curry powder and chopped tomatoes, then simmer gently for 45 minutes until tender.
  3. 3Stir in the Greek yoghurt at the end and serve with the heated basmati rice.
