Ingredients

  • 1 large sweet potato, about 300g
  • 200g cottage cheese
  • 80g cherry tomatoes
  • 20g pumpkin seeds
  • 20g rocket

Method

  1. 1Microwave the sweet potato for 8 to 10 minutes until soft.
  2. 2Split it open and spoon over the cottage cheese.
  3. 3Top with cherry tomatoes, pumpkin seeds and rocket.
