Ingredients
- 1 large sweet potato, about 300g
- 200g cottage cheese
- 80g cherry tomatoes
- 20g pumpkin seeds
- 20g rocket
Method
- 1Microwave the sweet potato for 8 to 10 minutes until soft.
- 2Split it open and spoon over the cottage cheese.
- 3Top with cherry tomatoes, pumpkin seeds and rocket.
