A great low-carb breakfast when you want high satiety without a heavy carb load.
Ingredients
- 6 eggs
- 4 rashers of back bacon, chopped
- 100g chestnut mushrooms, sliced
- 80g baby spinach
- 100g cherry tomatoes, halved
- 30g reduced-fat Cheddar, grated
Method
- 1Heat the oven to 180C and lightly grease a 6-hole muffin tin.
- 2Fry the bacon and mushrooms for 5 minutes, then stir in the spinach to wilt.
- 3Beat the eggs, divide the bacon mixture and tomatoes between the muffin holes, pour over the egg and top with Cheddar.
- 4Bake for 15 minutes until set and golden.
