A great low-carb breakfast when you want high satiety without a heavy carb load.

Ingredients

  • 6 eggs
  • 4 rashers of back bacon, chopped
  • 100g chestnut mushrooms, sliced
  • 80g baby spinach
  • 100g cherry tomatoes, halved
  • 30g reduced-fat Cheddar, grated

Method

  1. 1Heat the oven to 180C and lightly grease a 6-hole muffin tin.
  2. 2Fry the bacon and mushrooms for 5 minutes, then stir in the spinach to wilt.
  3. 3Beat the eggs, divide the bacon mixture and tomatoes between the muffin holes, pour over the egg and top with Cheddar.
  4. 4Bake for 15 minutes until set and golden.
