Ingredients

  • 1 large baking potato, about 300g
  • 3 eggs
  • 25g light mayonnaise
  • 10g cress
  • side salad leaves
  • black pepper

Method

  1. 1Bake the potato until crisp outside and fluffy inside.
  2. 2Boil the eggs for 8 minutes, cool, peel and chop.
  3. 3Mix the eggs with the mayonnaise and cress, then spoon into the split potato and serve with salad.
