Ingredients

  • 200g potatoes, diced small
  • 2 rashers of back bacon, chopped
  • 2 eggs
  • 80g mushrooms, sliced
  • 1 tsp olive oil
  • parsley

Method

  1. 1Parboil or microwave the diced potatoes until nearly tender.
  2. 2Fry the potatoes in the olive oil until crisping, then add the bacon and mushrooms.
  3. 3Crack in the eggs and cook until set, then finish with parsley.
