Ingredients
- 200g potatoes, diced small
- 2 rashers of back bacon, chopped
- 2 eggs
- 80g mushrooms, sliced
- 1 tsp olive oil
- parsley
Method
- 1Parboil or microwave the diced potatoes until nearly tender.
- 2Fry the potatoes in the olive oil until crisping, then add the bacon and mushrooms.
- 3Crack in the eggs and cook until set, then finish with parsley.
