A clever lower-carb dinner that still feels hearty and supports protein intake well.
Ingredients
- 500g 5% beef mince
- 2 courgettes, sliced lengthways
- 1 tin of chopped tomatoes
- 1 onion, diced
- 150g light mozzarella
- 150g cottage cheese
Method
- 1Brown the mince with the onion, then add the chopped tomatoes and simmer for 10 minutes.
- 2Layer the beef sauce with courgette slices and cottage cheese in a baking dish.
- 3Top with mozzarella and bake at 200C for 25 minutes until bubbling.
