Ingredients
- 6 eggs
- 1 small courgette, grated
- 50g reduced-fat Cheddar, grated
- 2 spring onions, sliced
- 1 tsp olive oil
- black pepper
Method
- 1Heat the oven to 180C and grease a 6-hole muffin tin.
- 2Squeeze excess water from the courgette, then mix with the eggs, Cheddar and spring onions.
- 3Divide into the muffin tin and bake for 20 to 22 minutes until set.
