Ingredients

  • 6 eggs
  • 1 small courgette, grated
  • 50g reduced-fat Cheddar, grated
  • 2 spring onions, sliced
  • 1 tsp olive oil
  • black pepper

Method

  1. 1Heat the oven to 180C and grease a 6-hole muffin tin.
  2. 2Squeeze excess water from the courgette, then mix with the eggs, Cheddar and spring onions.
  3. 3Divide into the muffin tin and bake for 20 to 22 minutes until set.
