A smart meal-prep lunch that keeps protein high and makes weekday choices easier.
Ingredients
- 250g chicken breast
- 150g wholewheat pasta
- 80g 0% Greek yoghurt
- 20g light mayonnaise
- 1 tsp mild curry powder
- 50g raisins
- 50g rocket
Method
- 1Cook the pasta, drain and cool slightly.
- 2Cook the chicken breast, slice it and mix with the Greek yoghurt, mayonnaise and curry powder.
- 3Toss the chicken with the pasta, raisins and rocket.
