A great dinner for keeping things lighter while still covering protein needs properly.
Ingredients
- 300g cod fillets
- 300g potatoes, peeled and chopped
- 1 spring onion, sliced
- 1 egg
- 30g breadcrumbs
- 80g mixed salad leaves
Method
- 1Boil the potatoes and mash them, then cook and flake the cod.
- 2Mix the cod with the mash and spring onion and shape into fishcakes.
- 3Coat lightly in beaten egg and breadcrumbs, then bake or fry until golden and serve with salad leaves.
