A great dinner for keeping things lighter while still covering protein needs properly.

Ingredients

  • 300g cod fillets
  • 300g potatoes, peeled and chopped
  • 1 spring onion, sliced
  • 1 egg
  • 30g breadcrumbs
  • 80g mixed salad leaves

Method

  1. 1Boil the potatoes and mash them, then cook and flake the cod.
  2. 2Mix the cod with the mash and spring onion and shape into fishcakes.
  3. 3Coat lightly in beaten egg and breadcrumbs, then bake or fry until golden and serve with salad leaves.
