Ingredients
- 300g chicken breast, diced
- 1 tbsp korma curry paste
- 150ml light coconut milk
- 50g 0% Greek yoghurt
- 15g ground almonds
- 150g microwave basmati rice
Method
- 1Cook the chicken with the korma curry paste in a pan until sealed.
- 2Add the coconut milk and simmer until the chicken is cooked through.
- 3Stir in the Greek yoghurt and ground almonds, then serve with the heated rice.
