An easy traybake that makes healthy eating simpler on busy evenings.
Ingredients
- 300g chicken breast, sliced
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 1 onion, sliced
- 1 tbsp fajita seasoning
- 200g baby potatoes, halved
Method
- 1Heat the oven to 200C and toss the chicken, peppers, onion and potatoes with the fajita seasoning on a tray.
- 2Spread everything out in a single layer.
- 3Roast for 20 to 22 minutes until the chicken is cooked and the potatoes are tender.
