An easy traybake that makes healthy eating simpler on busy evenings.

Ingredients

  • 300g chicken breast, sliced
  • 1 red pepper, sliced
  • 1 yellow pepper, sliced
  • 1 onion, sliced
  • 1 tbsp fajita seasoning
  • 200g baby potatoes, halved

Method

  1. 1Heat the oven to 200C and toss the chicken, peppers, onion and potatoes with the fajita seasoning on a tray.
  2. 2Spread everything out in a single layer.
  3. 3Roast for 20 to 22 minutes until the chicken is cooked and the potatoes are tender.
