Ingredients

  • 2 eggs
  • 2 slices rye bread
  • 70g avocado
  • 20g rocket
  • chilli flakes
  • lemon juice

Method

  1. 1Toast the rye bread and mash the avocado with a squeeze of lemon juice.
  2. 2Poach the eggs until just done.
  3. 3Spread the avocado on the rye, top with rocket and poached eggs, and finish with chilli flakes.
