A solid plant-based dinner for general health phases, especially when you want a budget-friendly option.
Ingredients
- 1 aubergine, diced
- 1 tin of chickpeas, drained
- 1 tin of chopped tomatoes
- 1 onion, diced
- 1 tbsp olive oil
- 1 tsp smoked paprika
Method
- 1Heat the oven to 200C and toss the aubergine with the olive oil and roast for 15 minutes.
- 2Cook the onion with smoked paprika, then add the chopped tomatoes and chickpeas.
- 3Combine with the roasted aubergine and bake for 15 more minutes.
