Ingredients

  • 1 aubergine, diced
  • 1 tin of chickpeas, drained
  • 1 tin of chopped tomatoes
  • 1 onion, diced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika

Method

  1. 1Heat the oven to 200C and toss the aubergine with the olive oil and roast for 15 minutes.
  2. 2Cook the onion with smoked paprika, then add the chopped tomatoes and chickpeas.
  3. 3Combine with the roasted aubergine and bake for 15 more minutes.
