A hearty high-protein dinner that feels like comfort food while keeping structure in place.
Ingredients
- 500g 5% beef mince
- 1 aubergine, sliced
- 1 onion, diced
- 1 tin of chopped tomatoes
- 200g 0% Greek yoghurt
- 50g Parmesan, grated
Method
- 1Brown the mince with the onion, then add the chopped tomatoes and simmer for 10 minutes.
- 2Grill or roast the aubergine slices until softened.
- 3Layer the beef and aubergine in a dish, top with Greek yoghurt and Parmesan, then bake until golden.
